The god that is symbolized by a cow is the Hindu Goddess Bhumidevi. She is the Goddess of the Earth and is often seen as a powerful goddess who rules the earth and its riches. She is associated with the creation of the earth and its wealth, with agriculture and fertility, and with abundance and prosperity.

She is also seen as a guardian, watching over her followers and keeping them safe. She is often depicted as a cow or with the head of a cow. In some depictions, a cow and its calf stand on either side of her.

In Hindu scriptures, Bhumidevi is often shown seated on a white cow and is often referred to as ‘Go-Mata’, meaning Mother Cow.
